Summer mix of fresh vegetable and fruit.
1 chicken breast
3 tablespoons of olive oil
2 tablespoons of mustard
Lemon juice from ½ lemon
Handful of fresh strawberries
Lettuce of choice
To make a marinade, add olive oil, mustard, lemon juice, salt and pepper into a jar. Place the lid and shake well until mixed. Wash chicken breasts, coat in marinade and let cool for at least 20 minutes. Grill the meat on heated grill until stripes appear and it’s cooked through. Meanwhile, to a large bowl add greens, chopped strawberries and feta cheese. Top with grilled pieces of chicken breasts, sprinkle with sea salt and balsamic vinaigrette.
Serve with Hubert rosé sparkling wine.
